Looking for a show-stopping accompaniment for your game day dips? These crispy herbed corn waffles are a delicious, easy and (most importantly) healthy side to pair with your game day favorites!

Ingredients
  • 1 cup cornmeal
  • 2 Tbsp gluten-free self-rising flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 Tbsp unsweetened applesauce
  • 1/2 cup nonfat plain Greek yogurt, room temperature
  • 1/2 cup oat milk, room temperature
  • 1 large egg, room temperature
  • 2 Tbsp chopped fresh cilantro
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/2 cup whole kernel corn, fresh or frozen
  • 2 Tbsp sliced thin green onion
  • Non-stick cooking spray
Preparation
  • Preheat oven to 200°F. Line a large rimmed baking sheet with parchment paper and set aside.
  • Mix all of the dry ingredients together in a medium mixing bowl. In a separate medium mixing bowl, combine the applesauce, yogurt, oat milk and egg and mix until well combined.
  • In small batches, add the dry ingredients to the wet ingredients until just combined. Add the cheese, corn kernels, green onion and cilantro and mix until well combined.
  • Generously spray a waffle maker with nonstick cooking spray. Spoon the batter into the bottom half of the waffle maker, close the lid and cook for 3 to 5 minutes, or until golden brown. Transfer the cooked waffle to the prepared baking sheet and place in the oven to keep warm. Repeat with the remaining batter. Serve immediately.
