Bring a bit of luck to breakfast with these charming Leprechaun Pancakes.
Healthy multigrain pancakes are topped off with some fresh fruit for a cheerful way to start the day!

Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 cup multi-grain flour
  • 2 Tbsp quick-cooking oats
  • 1 Tbsp yellow cornmeal
  • 1 Tbsp brown sugar
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup skim milk
  • 2 Tbsp fat-free vanilla yogurt
  • 1/2 Tbsp canola oil
  • 1 small egg, lightly beaten
  • 4 clementines, peeled
  • 1/2 cup seedless green grapes, halved
  • 1/2 banana, sliced
  • 1 Tbsp dark chocolate chips (16)
  • 1/4 red apple, sliced

Preparation

In a large bowl, combine the flours, oats, cornmeal, brown sugar, baking powder and salt.

In a medium bowl, whisk together the milk, yogurt, oil and egg. Add the wet ingredients to the dry ingredients and stir until well combined.

Lightly coat a griddle or skillet with nonstick cooking spray and preheat to medium high.

With a ladle, pour about 1/4 cup batter onto griddle for each pancake. With a spatula, flip pancakes when tops are covered with bubbles and edges look cooked. Cook until both sides are browned.

Decorate each pancake with clementine slices for the “hair” and “beard,” grapes for the “hat,” banana slices for the “eyes,” “ears” and “hat bow,” chocolate chips for the “eyes” and an apple slice for the “mouth.”
