If you can’t go out to lunch, take lunch outdoors! Pack a picnic lunch with these delicious chicken pita sandwiches. Portable and easy, these healthy sandwiches are under 200 calories.
Ingredients

2 Tbsp balsamic vinegar

1 1/2 Tbsp olive oil

2 Tbsp chopped drained sun-dried tomatoes

1/4 tsp black pepper

1/4 tsp dried tarragon

2 garlic cloves, finely minced

4 cups shredded cooked chicken breast (about 3/4 lb)

1 medium tomato, chopped

1/2 cup (2 oz) grated part-skim mozzarella cheese

2 scallions, chopped

1 Tbsp capers, rinsed and drained

1/4 cup thinly sliced fresh basil

6 pitas (6-inch diameter), cut in half

3 cups baby mixed greens
Preparation
- In a large bowl, combine balsamic vinegar, oil, sun-dried tomatoes, black pepper, tarragon and garlic. Stir in chicken, tomato, cheese, scallions, capers and basil.
- Line each pita half with 1/4 cup greens. Divide chicken mixture evenly among pita halves.
